- 1 lb ground beef (for flavorful meatballs)

Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish to prevent sticking.
- Combine the ground beef, breadcrumbs, parmesan cheese, parsley, egg, garlic powder, oregano, salt, and pepper in a large mixing bowl. Mix until well combined.
- Shape the mixture into small meatballs, about 1 inch in size.
- Heat a skillet over medium heat and brown the meatballs for about 5-7 minutes. Once done, set them aside.
- Spread the prepared mashed potatoes evenly in the bottom of the greased baking dish.
- Place the browned meatballs carefully on top of the mashed potatoes.
- Pour the marinara sauce over the meatballs, followed by a generous sprinkle of shredded cheddar cheese.
- Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Top with sour cream and chopped green onions just before serving, if desired.
Notes
For a crispy top, broil the casserole for a couple of minutes at the end of baking. Use leftover mashed potatoes for quicker preparation.
