  • 4 cups mashed potatoes (prepared to creamy perfection)
  • 1 lb ground beef (for flavorful meatballs)
  • 1/2 cup breadcrumbs (for texture)
  • 1/4 cup grated parmesan cheese (adds nutty richness)
  • 1/4 cup chopped parsley (to brighten the dish)
  • 1 egg (for binding)
  • 1 tsp garlic powder (for aromatic depth)
  • 1 tsp dried oregano (for an Italian touch)
  • Salt and pepper to taste (to enhance flavors)
  • 2 cups shredded cheddar cheese (for melty goodness)
  • 1 cup marinara sauce (for a tangy kick)
  • 1/2 cup sour cream (for creaminess)
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish to prevent sticking.
  2. Combine the ground beef, breadcrumbs, parmesan cheese, parsley, egg, garlic powder, oregano, salt, and pepper in a large mixing bowl. Mix until well combined.
  3. Shape the mixture into small meatballs, about 1 inch in size.
  4. Heat a skillet over medium heat and brown the meatballs for about 5-7 minutes. Once done, set them aside.
  5. Spread the prepared mashed potatoes evenly in the bottom of the greased baking dish.
  6. Place the browned meatballs carefully on top of the mashed potatoes.
  7. Pour the marinara sauce over the meatballs, followed by a generous sprinkle of shredded cheddar cheese.
  8. Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Top with sour cream and chopped green onions just before serving, if desired.

Notes

For a crispy top, broil the casserole for a couple of minutes at the end of baking. Use leftover mashed potatoes for quicker preparation.
