Instructions
- Preheat your oven to 350°F (175°C) and prepare your cake pans by greasing and lining them with parchment paper.
- Whisk together the flour, baking powder, and salt in a mixing bowl.
- Beat the softened butter and sugar in a separate bowl until fluffy and pale. Add eggs one at a time, then mix in vanilla, lime juice, and lime zest.
- Gradually alternate adding the dry ingredients and buttermilk to the wet mixture until just combined.
- Divide the batter evenly between prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool completely.
- Prepare the filling by whisking together condensed milk, lime juice, zest, and egg yolks in a saucepan over medium heat until thickened.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Assemble the cake starting with one layer, spreading filling, and topping with whipped cream. Repeat and finish with whipped cream all around.
