Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tbsp lime zest
  • 1/4 cup fresh lime juice (for glaze)
  • 2 tbsp powdered sugar (for glaze)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan; then, line it with parchment paper.
  2. Combine graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted unsalted butter until resembling wet sand; press into the bottom of the pan.
  3. Bake the crust for 10 minutes and set aside to cool.
  4. Beat the softened cream cheese with 1 cup of granulated sugar until smooth—about 3 minutes.
  5. Add in vanilla extract, fresh lime juice, and lime zest, mixing well.
  6. Incorporate the eggs one at a time, beating well after each addition.
  7. Pour the cheesecake mixture into the cooled crust and smooth the top.
  8. Bake for 45-50 minutes, until edges are set and center is slightly jiggly.
  9. Turn off the oven and let it cool inside for 1 hour, then cool completely at room temperature before refrigerating for at least 4 hours or overnight.
  10. Beat the heavy whipping cream with 1/4 cup of powdered sugar until stiff peaks form, then gently fold in lime juice and lime zest.
  11. Spread the lime mousse evenly over the chilled cheesecake.
  12. Mix lime juice and powdered sugar in a small bowl until smooth, then drizzle over the mousse layer.

Notes

Allow ample time for the cheesecake to cool and set for the best texture. Feel free to adjust lime juice or zest according to your taste.
