  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 23 tablespoons cold water
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 4 large egg yolks, lightly beaten
  • 3/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons unsalted butter
  • 4 large egg whites
  • 1/2 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pulse together the flour, powdered sugar, and salt until combined.
  3. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  4. Next, add the egg yolk along with 2 tablespoons of cold water. Pulse until the dough starts to come together.
  5. Roll the dough out on a lightly floured surface until large enough for a 9-inch tart pan. Press into the pan, trimming excess edges.
  6. Prick the bottom with a fork to prevent bubbling. Bake for 12-15 minutes until golden.
  7. Allow the crust to cool.
  8. In a saucepan, whisk together granulated sugar, cornstarch, and salt. Gradually add water and cook over medium heat until thickened.
  9. Temper the beaten egg yolks with a small amount of hot mixture. Add it back to the saucepan and cook for 1-2 minutes until thickened.
  10. Stir in lemon juice, zest, and butter until smooth. Pour into the baked tart crust.
  11. In a mixing bowl, beat egg whites and cream of tartar until soft peaks form.
  12. Gradually add granulated sugar while continuing to beat until stiff peaks form.
  13. Add vanilla extract and mix gently.
  14. Spread meringue over the lemon filling, sealing the edges.
  15. Bake at 350°F (175°C) for 10-12 minutes until golden brown.
  16. Cool completely before slicing and serving.

Notes

Use organic lemons for better flavor. Ensure ingredients are at the right temperatures for optimal results.
