- 1/4 cup fresh lime juice
- 1 tablespoon lemon zest

- 1/2 cup chopped pistachios

- Whipped cream for topping

Instructions
- Preheat your oven to 325°F (163°C). Prepare a 9-inch springform pan by greasing it and lining the bottom with parchment paper.
- Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl. Mix until fully combined and press into the prepared pan.
- Bake the crust for 10 minutes, then let it cool while you prepare the filling.
- Beat the cream cheese and sugar in a large bowl using an electric mixer until smooth and creamy.
- Add the vanilla extract, lemon juice, lime juice, lemon zest, and lime zest, blending until well incorporated.
- Incorporate the eggs, one at a time, beating well after each addition.
- Stir in the chopped pistachios and cherries until evenly distributed.
- Pour the filling into the cooled crust, smoothing the top with a spatula.
- Bake for 50-60 minutes until set around the edges but jiggly in the center.
- Turn off the oven and leave the cheesecake inside for an additional hour.
- Cool to room temperature, then chill in the refrigerator for at least 4 hours.
- Top with whipped cream and garnish with whole cherries and chopped pistachios before serving.
