  • 2 tbsp sugar
  • 3 cups cream cheese, softened

  • 1 tbsp lemon zest
  • 1 tbsp lime zest
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1 tsp vanilla extract
  • 1 cup fresh cherries, pitted and halved
  • 1/4 cup sugar (for topping)
  • 1 tbsp lemon juice (for topping)
  • 1 tbsp lime juice (for topping)
  • 1/4 cup chopped pistachios (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, finely chopped pistachios, melted butter, and sugar in a mixing bowl. Press firmly into the bottom of a springform pan and bake for 10-12 minutes until golden. Allow to cool completely.
  3. Beat the softened cream cheese until smooth. Gradually add in the sugar, lemon zest, lime zest, lemon juice, lime juice, and vanilla extract. Mix well. Add the eggs one by one, mixing thoroughly after each addition.
  4. Pour the cheesecake filling into the cooled crust. Bake for 50-60 minutes until slightly jiggly in the center. Let cool in the oven for 1 hour with the door ajar, then refrigerate for at least 4 hours or overnight.
  5. Combine cherries, sugar, lemon juice, and lime juice in a saucepan over medium heat. Cook until cherries soften, then remove from heat and let cool.
  6. Spread the cooled cherry topping over the chilled cheesecake and sprinkle with chopped pistachios.

Ensure cream cheese and eggs are at room temperature for a smoother filling. Consider using a water bath while baking to prevent cracks.
