- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 1 1/2 cups cream cheese, softened
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1/4 cup sour cream
- Zest of 1 lemon
- Zest of 1 lime
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- 1/2 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/4 cup pistachios, chopped
- 1 cup fresh cherries, pitted and halved
- 2 tablespoons sugar (for the cherries)
Instructions
- Preheat the oven to 325°F (165°C).
- Combine the graham cracker crumbs and melted butter in a small bowl. Press this mixture into the bottom of a springform pan to create a solid crust. Bake for 10 minutes, then set aside to cool.
- Beat together the softened cream cheese, mascarpone cheese, powdered sugar, sour cream, lemon zest, lime zest, lemon juice, lime juice, and vanilla extract in a large bowl until smooth.
- Whip the heavy cream in a separate bowl until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Pour the cheesecake filling onto the cooled crust and smooth the top. Refrigerate for at least 4 hours, ideally overnight.
- Prepare the cherry topping by combining the pitted and halved cherries with sugar in a small saucepan and cooking over low heat for 5-7 minutes.
- Top the set cheesecake with cherry syrup and sprinkle chopped pistachios before slicing and serving.
Notes
For an extra-fine crust texture, use a food processor to pulverize the graham crackers. You can also mix different cherry varieties for enhanced flavor complexity.
