Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a larger bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  4. Add the eggs one at a time, blending each until fully incorporated.
  5. Stir in the vanilla extract and lemon zest.
  6. Gradually add the dry flour mixture to the wet ingredients, alternating with milk and lemon juice, mixing until just combined.
  7. Pour the batter into the prepared pan, smoothing the top with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. For the glaze, whisk together the powdered sugar and lemon juice until smooth and drizzle over the cooled cake.
