- 4 boneless sole filets
- Salt and pepper to taste
- 1/2 cup flour
- 8 tablespoons butter, divided
- Juice from 1/2 lemon (reserve remaining lemon, sliced, for garnish)
- 1/2 cup fresh chopped parsley, divided
- 2 tablespoons capers
Instructions
- Season the sole filets with salt and pepper on both sides.
- Dredge each filet in flour, pressing gently to coat both sides.
- Heat 4 tablespoons of butter in a large skillet over medium-high heat until foamy.
- Cook the sole filets for 2 minutes on one side, then flip and cook for another 2 minutes. Transfer to a serving plate and cover with foil to keep warm.
- Add the remaining butter to the skillet along with the lemon juice and half of the chopped parsley. Whisk until well combined.
- Plate the cooked sole with the lemon-caper sauce on top. Garnish with capers, remaining parsley, and lemon slices.
Notes
For best results, use fresh fish. Avoid overcrowding the skillet for even cooking.
