Description

A delightful seafood dish emphasizing the elegant flavors of butter, fresh lemons, and tangy capers, cooked to perfection in under ten minutes.


Ingredients

  • 4 boneless sole filets
  • Salt and pepper to taste
  • 1/2 cup flour
  • 8 tablespoons butter, divided
  • Juice from 1/2 lemon (reserve remaining lemon, sliced, for garnish)
  • 1/2 cup fresh chopped parsley, divided
  • 2 tablespoons capers

Instructions

  1. Season the sole filets with salt and pepper on both sides.
  2. Dredge each filet in flour, pressing gently to coat both sides.
  3. Heat 4 tablespoons of butter in a large skillet over medium-high heat until foamy.
  4. Cook the sole filets for 2 minutes on one side, then flip and cook for another 2 minutes. Transfer to a serving plate and cover with foil to keep warm.
  5. Add the remaining butter to the skillet along with the lemon juice and half of the chopped parsley. Whisk until well combined.
  6. Plate the cooked sole with the lemon-caper sauce on top. Garnish with capers, remaining parsley, and lemon slices.

Notes

For best results, use fresh fish. Avoid overcrowding the skillet for even cooking.
