Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 8 oz white chocolate, melted

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, cocoa powder, sugar, and melted butter in a mixing bowl.
  3. Press this mixture into the bottom of a 9-inch springform pan.
  4. Beat together cream cheese and powdered sugar until smooth. Add heavy whipping cream, red food coloring, and vanilla extract.
  5. Pour the red velvet mixture over the prepared crust and bake for 30 minutes.
  6. Melt white chocolate in a microwave-safe bowl in 30-second intervals.
  7. Beat more cream cheese and powdered sugar until fluffy. Add melted white chocolate and mix until smooth.
  8. Whip heavy cream until stiff peaks form and fold into the white chocolate mixture.
  9. Spread the white chocolate layer over the cooled red velvet base.
  10. Chill in the refrigerator for at least 4 hours or overnight.
  11. Slice and serve, cleaning the knife between cuts for neat slices.
