- 1 cup milk (237 ml)
- 1 egg
- 1 cup flour (120 grams)
- 2 tablespoons seasoned salt
- 1 teaspoon ground black pepper
- 1/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 5 large russet potatoes
- Shortening or canola oil for frying
Instructions
- Whisk together the milk and egg until well combined.
- Combine the flour with the seasoned salt, pepper, paprika, and garlic powder.
- Scrub the russet potatoes clean and slice them into thick wedges.
- Soak the potato wedges in the milk and egg mixture for 30 minutes.
- Heat about 3 inches of oil to 375°F (190°C).
- Toss the soaked potato wedges in the seasoned flour mixture.
- Carefully place the coated wedges in the hot oil and fry for 3–4 minutes.
- Return the fried wedges for a second fry, cooking for an additional 4–6 minutes.
Notes
For extra flavor, consider adding cayenne pepper to the flour mixture. Let fried wedges rest on a wire rack for optimal crispiness.
