Description

Enjoy crispy, golden potato wedges that taste just like KFC’s famous side dish, perfect for family gatherings or movie nights.


Ingredients

  • 1 cup milk (237 ml)
  • 1 egg
  • 1 cup flour (120 grams)
  • 2 tablespoons seasoned salt
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 5 large russet potatoes
  • Shortening or canola oil for frying

Instructions

  1. Whisk together the milk and egg until well combined.
  2. Combine the flour with the seasoned salt, pepper, paprika, and garlic powder.
  3. Scrub the russet potatoes clean and slice them into thick wedges.
  4. Soak the potato wedges in the milk and egg mixture for 30 minutes.
  5. Heat about 3 inches of oil to 375°F (190°C).
  6. Toss the soaked potato wedges in the seasoned flour mixture.
  7. Carefully place the coated wedges in the hot oil and fry for 3–4 minutes.
  8. Return the fried wedges for a second fry, cooking for an additional 4–6 minutes.

Notes

For extra flavor, consider adding cayenne pepper to the flour mixture. Let fried wedges rest on a wire rack for optimal crispiness.
