- 3/4 cup key lime juice

- 1/2 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
Instructions
- Preheat the oven to 325°F (165°C).
- Combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
- Beat cream cheese with sugar, flour, key lime juice, zest, and vanilla extract until smooth.
- Add eggs one at a time, blending gently, then stir in sour cream.
- Pour the filling into the crust and bake for 55-60 minutes.
- Cool in the oven for 1 hour, then cool fully on a wire rack.
- Chill in the refrigerator for a minimum of 4 hours before serving.
Notes
Use room temperature cream cheese for a smoother filling. You can substitute store-bought graham cracker crusts for homemade if you’re short on time.
