Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup white sugar
  • 6 tablespoons butter, melted
  • 3 cups cream cheese, softened
  • 1 cup white sugar
  • 3 tablespoons all-purpose flour
  • 3/4 cup key lime juice
  • 1 tablespoon key lime zest
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. Beat cream cheese with sugar, flour, key lime juice, zest, and vanilla extract until smooth.
  4. Add eggs one at a time, blending gently, then stir in sour cream.
  5. Pour the filling into the crust and bake for 55-60 minutes.
  6. Cool in the oven for 1 hour, then cool fully on a wire rack.
  7. Chill in the refrigerator for a minimum of 4 hours before serving.

Notes

Use room temperature cream cheese for a smoother filling. You can substitute store-bought graham cracker crusts for homemade if you’re short on time.
