Ingredients

  • 45 lbs beef tenderloin, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1/4 cup Dijon mustard
  • 1/4 cup unsalted butter, softened
  • 1/4 cup heavy cream (optional, for richer sauce)

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Pat the beef tenderloin dry with paper towels.
  3. Rub the entire roast with olive oil, then season with kosher salt and black pepper.
  4. Blend minced garlic, rosemary, and thyme in a bowl, and rub over the tenderloin.
  5. Sear the beef in a hot skillet for 3-4 minutes on all sides.
  6. Remove the skillet from heat and brush the tenderloin with Dijon mustard.
  7. Roast in the oven for 25-30 minutes until the internal temperature reaches 130°F (54°C).
  8. Let the beef rest covered with foil for 10-15 minutes.
  9. Melt butter in the skillet, add heavy cream if using, and simmer for 2-3 minutes.
  10. Slice the beef into 1-inch thick slices, drizzle with sauce and serve.

Notes

Use a meat thermometer for perfect cooking. Consider marinating for added flavor.
