- 4–5 lbs beef tenderloin, trimmed
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1/4 cup Dijon mustard
- 1/4 cup unsalted butter, softened
- 1/4 cup heavy cream (optional, for richer sauce)
Instructions
- Preheat your oven to 450°F (230°C).
- Pat the beef tenderloin dry with paper towels.
- Rub the entire roast with olive oil, then season with kosher salt and black pepper.
- Blend minced garlic, rosemary, and thyme in a bowl, and rub over the tenderloin.
- Sear the beef in a hot skillet for 3-4 minutes on all sides.
- Remove the skillet from heat and brush the tenderloin with Dijon mustard.
- Roast in the oven for 25-30 minutes until the internal temperature reaches 130°F (54°C).
- Let the beef rest covered with foil for 10-15 minutes.
- Melt butter in the skillet, add heavy cream if using, and simmer for 2-3 minutes.
- Slice the beef into 1-inch thick slices, drizzle with sauce and serve.
Notes
Use a meat thermometer for perfect cooking. Consider marinating for added flavor.
