Delightful dessert bites bursting with fresh strawberries, creamy cheesecake, and a crunchy graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream, chilled
- 1/2 cup fresh strawberries, finely chopped
- 1/4 cup mini chocolate chips (optional)
- 1/2 cup fresh strawberries, sliced
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the graham cracker crumbs, granulated sugar, and melted butter in a small bowl. Mix well until the crumbs are coated.
- Press the crumb mixture firmly into the bottoms of mini cupcake liners or silicone molds to create a crust. Bake for 8-10 minutes until golden, then cool.
- Beat the softened cream cheese with powdered sugar until smooth. Add the vanilla extract and mix until combined.
- Whip the chilled heavy cream in another bowl until stiff peaks form, then gently fold it into the cream cheese mixture. Stir in the chopped fresh strawberries.
- Spoon or pipe the cheesecake filling on top of the cooled crusts. Sprinkle mini chocolate chips and garnish with sliced strawberries.
- Refrigerate the bites for at least 2 hours to allow the flavors to meld and the filling to set.
Notes
For a richer taste, mix regular and flavored cream cheese. You can also drizzle melted chocolate on top right before serving.
