Description

Delightful dessert bites bursting with fresh strawberries, creamy cheesecake, and a crunchy graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 1/2 cup fresh strawberries, finely chopped
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 cup fresh strawberries, sliced

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the graham cracker crumbs, granulated sugar, and melted butter in a small bowl. Mix well until the crumbs are coated.
  3. Press the crumb mixture firmly into the bottoms of mini cupcake liners or silicone molds to create a crust. Bake for 8-10 minutes until golden, then cool.
  4. Beat the softened cream cheese with powdered sugar until smooth. Add the vanilla extract and mix until combined.
  5. Whip the chilled heavy cream in another bowl until stiff peaks form, then gently fold it into the cream cheese mixture. Stir in the chopped fresh strawberries.
  6. Spoon or pipe the cheesecake filling on top of the cooled crusts. Sprinkle mini chocolate chips and garnish with sliced strawberries.
  7. Refrigerate the bites for at least 2 hours to allow the flavors to meld and the filling to set.

Notes

For a richer taste, mix regular and flavored cream cheese. You can also drizzle melted chocolate on top right before serving.
