Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter and granulated sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing well until fully incorporated.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Fold the dry ingredients into the wet mixture until the dough comes together.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet.
- Press your thumb into the center of each ball to create a small indentation.
- Whisk together the brown sugar, corn syrup, melted butter, egg, and vanilla extract for the filling.
- Stir in chopped pecans and spoon about 1 teaspoon into the center of each cookie.
- Bake for 10-12 minutes or until the edges turn light golden brown.
- Cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
