Description

A delightful dessert featuring warm puffs filled with creamy banana pudding and coated in rich chocolate.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1/3 cup cornstarch
  • 2 large egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1 ripe banana, mashed
  • 8 oz semi-sweet chocolate
  • 1 tbsp coconut oil (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine 1 cup of water, 1/2 cup of unsalted butter, and 1/4 tsp of salt in a medium saucepan. Bring to a boil.
  3. Add flour all at once; stir until dough forms and pulls away from the pan.
  4. Cool the dough slightly, then add 4 large eggs, one at a time, stirring until smooth.
  5. Transfer the dough to a piping bag and pipe small mounds onto the baking sheet.
  6. Bake for 18-22 minutes until golden brown. Cool on a wire rack.
  7. Whisk together 2 cups of milk, 1/2 cup of sugar, 1/3 cup of cornstarch, and 1/4 tsp salt in a saucepan over medium heat until thickened.
  8. Temper the 2 egg yolks by mixing with a small amount of hot milk, then return to the saucepan and cook for another 2 minutes.
  9. Add 2 tbsp of butter, 1 tsp of vanilla extract, and mashed banana to the filling. Cool to room temperature and chill for 1 hour.
  10. Cut a small slit in each puff and fill with banana pudding.
  11. Melt the 8 oz of chocolate with 1 tbsp of coconut oil in microwave or double boiler until smooth.
  12. Dip each filled puff in melted chocolate and refrigerate until set.
