A delightful dessert featuring warm puffs filled with creamy banana pudding and coated in rich chocolate.
Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 tsp salt
- 4 large eggs
- 2 cups milk
- 1/2 cup sugar
- 1/3 cup cornstarch
- 2 large egg yolks
- 2 tbsp butter
- 1 tsp vanilla extract
- 1 ripe banana, mashed
- 8 oz semi-sweet chocolate
- 1 tbsp coconut oil (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine 1 cup of water, 1/2 cup of unsalted butter, and 1/4 tsp of salt in a medium saucepan. Bring to a boil.
- Add flour all at once; stir until dough forms and pulls away from the pan.
- Cool the dough slightly, then add 4 large eggs, one at a time, stirring until smooth.
- Transfer the dough to a piping bag and pipe small mounds onto the baking sheet.
- Bake for 18-22 minutes until golden brown. Cool on a wire rack.
- Whisk together 2 cups of milk, 1/2 cup of sugar, 1/3 cup of cornstarch, and 1/4 tsp salt in a saucepan over medium heat until thickened.
- Temper the 2 egg yolks by mixing with a small amount of hot milk, then return to the saucepan and cook for another 2 minutes.
- Add 2 tbsp of butter, 1 tsp of vanilla extract, and mashed banana to the filling. Cool to room temperature and chill for 1 hour.
- Cut a small slit in each puff and fill with banana pudding.
- Melt the 8 oz of chocolate with 1 tbsp of coconut oil in microwave or double boiler until smooth.
- Dip each filled puff in melted chocolate and refrigerate until set.
