Ingredients

  • ¾ cup white chocolate chips
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1½ tablespoons oil (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the shelled pistachios evenly on a baking sheet and roast them for about 6 minutes, until they are warm and fragrant. Allow them to cool.
  2. Add the roasted pistachios to a food processor and blend for 2–3 minutes until a coarse paste forms. The natural oils will start to release, contributing to a rich texture.
  3. Add the white chocolate chips, sugar, salt, and water to the pistachio paste. Blend everything together until smooth, creating a luxurious spread.
  4. Optionally, drizzle in the oil while continuing to blend for a creamier texture. Adjust according to your personal texture preference.
  5. Transfer the spread to an airtight container and refrigerate. The flavors will deepen as it chills, making it even more delightful when you dig in!
