- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (if using cornstarch)
Instructions
- In a medium bowl, take your hulled and sliced strawberries and sprinkle the granulated sugar over them. Gently toss to coat the strawberries evenly, allowing the sugar to melt into their sweet juices. Let this mixture sit for about 10-15 minutes.
- Once the strawberries have infused with sugar, add a tablespoon of fresh lemon juice and a teaspoon of vanilla extract to the bowl.
- If you prefer a thicker topping, dissolve the cornstarch in the two tablespoons of water until smooth; then fold it into the strawberry mixture.
- Transfer your strawberry mix to a small saucepan over medium heat. As it warms, stir gently, feeling the mixture come together.
- After about 5-7 minutes, you’ll notice it thickening, creating a luscious glaze that hugs the strawberries perfectly.
- Once thickened, remove it from the heat and allow it to cool completely before using it on your cheesecake.
Notes
Use ripe strawberries for the best flavor and texture. The optional cornstarch thickens the topping for a more luscious glaze.
