Description

A nostalgic comfort food featuring elbow macaroni, savory tomato sauce, and seasoned ground beef, perfect for busy weeknights and family gatherings.


Ingredients

  • 2 cups elbow macaroni noodles
  • 1 lb ground beef (80/20 blend)
  • 1 yellow onion, diced
  • 3 cloves fresh garlic, minced
  • 1 tbsp Italian seasoning blend
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 cups tomato sauce

Instructions

  1. Heat a large skillet over medium-high heat, add the ground beef, and break it into smaller pieces. Cook until browned, about 7-8 minutes, then add the diced onions and continue cooking until softened.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the Italian seasoning, salt, pepper, and garlic powder, cooking for 1-2 minutes.
  4. Pour in the tomato sauce, scraping the bottom of the pan. Bring to a simmer for about 20 minutes, stirring occasionally.
  5. Meanwhile, boil a pot of salted water and cook the elbow macaroni according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  6. Add the drained macaroni to the sauce, folding gently to coat. If desired, add some of the reserved pasta water for creaminess.
  7. Let rest for 90 seconds before serving. Enjoy!
  8. For optional enhancements, consider mixing in grated carrots, bell peppers, or top with mozzarella and parmesan cheese.

Notes

Beefaroni can be frozen for up to three months. Reheat with a splash of water for best texture.
