Description

A hearty blend of ground beef, creamy soups, and baked potatoes, Hobo Casserole is the ultimate comfort food perfect for family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 medium russet potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 3/4 cup evaporated milk
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste
  • Optional add-ins: Worcestershire sauce, frozen peas, green beans, or corn

Instructions

  1. In a large skillet over medium heat, brown the ground beef with the diced onion and minced garlic. Season with salt and pepper. Once the beef is no longer pink, drain the excess grease and set aside.
  2. In a medium bowl, whisk together the cream of mushroom soup, cream of chicken soup, and evaporated milk. Stir in Worcestershire sauce if using.
  3. Preheat the oven to 350°F (175°C). Lightly grease a 9×13 inch casserole dish. Layer the thinly sliced potatoes evenly at the bottom. Spoon half of the beef mixture over the potatoes, followed by half of the soup mixture. Sprinkle 1 cup of shredded cheddar cheese over this layer. Repeat the layering process with the remaining beef, soup mixture, and cheese.
  4. Cover the dish tightly with foil and bake for 60 minutes. Remove the foil and continue baking for another 20-25 minutes or until the top is golden and bubbly. Let it rest for 10 minutes before serving.

Notes

For a healthier version, swap ground beef for ground turkey and use dairy-free cream soups. Add extra vegetables for more nutrition.
