  • 1 cup broccoli florets, chopped

  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup spinach, chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup shredded mozzarella cheese
  • 2 eggs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • Cooking spray or additional olive oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish using cooking spray or a drizzle of olive oil.
  3. Combine the cottage cheese, broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion in a large mixing bowl.
  4. Whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and oregano in a separate bowl.
  5. Pour the egg mixture over the vegetables and stir gently until well coated.
  6. Transfer the veggie mixture into the greased baking dish and sprinkle mozzarella cheese on top.
  7. Bake for about 30-35 minutes until the top is golden brown and veggies are tender.
