Description

A creamy and indulgent high protein pistachio ice cream perfect for a refreshing dessert that supports health goals.


Ingredients

  • 2 cups Greek yogurt (unsweetened, plain)
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1/2 cup pistachio nuts, shelled
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup vanilla or chocolate protein powder (optional)

Instructions

  1. Add the shelled pistachios to a food processor or blender. Pulse until finely chopped into a paste-like consistency.
  2. Combine the Greek yogurt, almond milk, chopped pistachios, honey or maple syrup, vanilla extract, salt, and protein powder in a medium mixing bowl. Stir until well blended.
  3. Chill the mixture in the fridge for about 1-2 hours before churning for maximum flavor infusion.
  4. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, approximately 20-25 minutes.
  5. Transfer the ice cream into a storage container, smooth the surface, and freeze for at least 3 hours until firm.
  6. Scoop out the ice cream and enjoy the creamy, protein-packed treat.

For best results, ensure your ice cream maker is pre-frozen and allow sufficient chilling time for the mixture.
