Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1/2 cup milk
  • 1 cup white chocolate chips, melted
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  4. Cream the butter and sugar together in a large mixing bowl until light and fluffy.
  5. Add the eggs one at a time, beating well after each addition.
  6. Stir in the vanilla extract.
  7. Mix in the crushed pineapple and milk until well combined.
  8. Gradually add the dry mixture to the wet ingredients until just combined.
  9. Stir in the melted white chocolate chips.
  10. Divide the batter evenly between the prepared cake pans.
  11. Bake for 25-30 minutes, or until a toothpick comes out clean.
  12. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  13. Beat the cream cheese and powdered sugar until smooth, then add heavy cream and vanilla, beating until fluffy.
  14. Fold in the melted white chocolate chips.
  15. Spread a layer of frosting on one cake layer, then top with the second layer and frost the entire cake.

Notes

For a lighter version, substitute whole wheat flour and reduce sugar for a healthier cake.
