Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- Cream the butter and sugar together in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract.
- Mix in the crushed pineapple and milk until well combined.
- Gradually add the dry mixture to the wet ingredients until just combined.
- Stir in the melted white chocolate chips.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Beat the cream cheese and powdered sugar until smooth, then add heavy cream and vanilla, beating until fluffy.
- Fold in the melted white chocolate chips.
- Spread a layer of frosting on one cake layer, then top with the second layer and frost the entire cake.
Notes
For a lighter version, substitute whole wheat flour and reduce sugar for a healthier cake.
