Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped celery, carrot, and green onion; sauté for about 5 minutes.
  3. Stir in the finely chopped garlic for just 1 minute.
  4. Mix in the flour, stirring for another minute.
  5. Pour in the heavy whipping cream while whisking to ensure smoothness.
  6. Add the shrimp stock, cooking until thickened, about 10 minutes.
  7. Toss in the chopped shrimp; bring to a gentle boil.
  8. Reduce the heat to simmer and cook for an additional 10 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with toasted croutons and extra green onion.
