- 5–6 cups homemade shrimp stock
- 2 lb raw jumbo shrimp, peeled, deveined, and chopped
- 4 slices rustic or French bread, cubed and toasted

Instructions
- Melt the butter in a large pot over medium heat.
- Add the chopped celery, carrot, and green onion; sauté for about 5 minutes.
- Stir in the finely chopped garlic for just 1 minute.
- Mix in the flour, stirring for another minute.
- Pour in the heavy whipping cream while whisking to ensure smoothness.
- Add the shrimp stock, cooking until thickened, about 10 minutes.
- Toss in the chopped shrimp; bring to a gentle boil.
- Reduce the heat to simmer and cook for an additional 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with toasted croutons and extra green onion.
Notes
For extra flavor, add a splash of lemon juice before serving. Consider fresh herbs or a dash of cayenne for added zest.
