Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced potatoes
  • 1 small onion, diced
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until cooked.
  2. Drain excess fat.
  3. Transfer the beef into your crock pot.
  4. Add diced tomatoes, corn, pinto beans, diced potatoes, and onion.
  5. Pour in beef broth.
  6. Sprinkle in chili powder, garlic powder, smoked paprika, salt, and pepper.
  7. Stir to combine.
  8. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  9. Stir before serving and enjoy!

Notes

For extra flavor, consider adding minced garlic or chopped bell peppers while sautéing the beef. You can also use ground turkey for a lighter version.
