Description
A hearty and comforting beef stew braised in Guinness, perfect for family dinners.
Ingredients

- 2 tbsp olive oil
- 600 g braising beef, chopped into chunks
- 2 tbsp plain (all-purpose) flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cloves garlic, peeled and minced
- 330 ml Guinness or other ale
- 360 ml beef stock
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small courgette/zucchini, chopped into chunks
- 3 tbsp grated parmesan cheese
- Freshly chopped parsley
- 1/4 red onion, peeled and thinly sliced
- Cooked couscous (Ainsley Harriott’s Spice Sensation recommended)
Instructions
- Preheat your oven to 160°C (325°F).
- Heat the olive oil in a Dutch oven or heavy-based pan over medium-high heat.
- Place the chopped beef into a bowl or bag. Add the flour, salt, and pepper, then toss to coat.
- Add the beef to the hot oil and brown all over for about 6 to 8 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the Guinness and beef stock, bringing to a boil. Stir and cover the pan.
- Cook in the oven for 3 hours, checking every hour and adding water if it looks dry.
- Add the chopped bell peppers and courgette to the pot and cook for another 5 minutes.
- Remove from the oven and sprinkle with parmesan, parsley, and red onions. Serve with couscous.
Notes
For best results, use high-quality braising beef and consider marinating the beef overnight in Guinness.
