  • 2 teaspoons Tajin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 large ripe avocado, diced
  • 1 large mango, diced
  • 1/2 red bell pepper, diced small
  • 2 tablespoons finely chopped cilantro
  • 1/2 jalapeño, seeded and minced
  • 1/4 cup finely diced red onion
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1/2 teaspoon kosher salt, plus more to taste

Instructions

  1. Begin by preparing the salmon marinade. In a large bowl, whisk together the soy sauce (or coconut aminos), olive oil, maple syrup (or brown sugar), lime juice, crushed garlic, and all spices.
  2. Immerse the salmon in this marinade, ensuring each piece is well-coated, and refrigerate for a minimum of 20 minutes or up to overnight.
  3. Combine the diced avocado, mango, red bell pepper, cilantro, jalapeño, and red onion in another bowl to prepare the salsa.
  4. Dress the salsa with lime juice and a sprinkle of kosher salt to enhance its flavors, and set aside.
  5. Preheat your grill to medium-high heat, about 400-450°F.
  6. Brush the grill grates with oil to prevent sticking, then lay the salmon skin-side down and cook for approximately 4-6 minutes.
  7. Flip the salmon only once, grilling until the internal temperature reaches between 135°F to 140°F.
  8. Remove the salmon from the grill and serve it immediately topped with a generous scoop of mango salsa.
