- 1 1/2 pounds salmon fillets, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 1 garlic clove, minced
- Salt and pepper to taste
- Wooden or metal skewers
- 1 cup Greek yogurt
- 2 tablespoons chopped fresh dill
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Instructions
- In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper. Toss the salmon cubes into the marinade, cover, and refrigerate for at least 30 minutes.
- Remove salmon from the marinade and thread onto skewers, leaving space for even cooking.
- Preheat the grill to medium-high and lightly oil the grates.
- Grill skewers for 3-4 minutes per side, or until salmon is opaque and flakes easily.
- In a bowl, mix Greek yogurt, chopped dill, lemon juice, lemon zest, minced garlic, salt, and pepper until smooth.
- Serve skewers with the creamy dill yogurt sauce and garnish with extra dill if desired.
Notes
Consider adding vegetables to the skewers for extra color and nutrients. Marinate the salmon longer for deeper flavor.
