Ingredients

- 2 slices of bread (your choice of sourdough or whole wheat)
- 2 tbsp unsalted butter, softened
- 1 cup Gouda cheese, shredded
- 1 cup mushrooms, sliced
- 1 small onion, thinly sliced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp fresh thyme leaves (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Toss the sliced mushrooms and onions with olive oil, salt, and pepper.
- Spread the mushrooms and onions evenly on a baking sheet and roast for 15-20 minutes.
- Heat a skillet over medium heat.
- Butter one side of each slice of bread generously.
- Place one slice of bread, buttered side down, into the heated skillet.
- Layer with shredded Gouda cheese.
- Add the roasted mushrooms and onions on top of the cheese.
- Cover with the second slice of bread, buttered side up.
- Grill the sandwich for 3-4 minutes on each side.
- Remove the sandwich from the skillet, slice in half, and serve warm.
Notes
Experiment with different types of bread for a gourmet twist. Adding cream cheese can enhance creaminess.
