Ingredients

  • Juice and zest of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, finely minced (or 1 tsp dried garlic powder)
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp + a pinch of sea salt
  • 1/4 tsp coarse black pepper
  • 1 pound thin-sliced chicken breast
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh chopped parsley
  • Additional lemon wedges for serving

Instructions

  1. Begin by preparing the marinade: In a large mixing bowl, combine the lemon zest, lemon juice, olive oil, minced garlic (or garlic powder), dried oregano, smoked paprika, sea salt, and black pepper. Whisk the mixture until it’s well combined. Reserve 1/4 cup of this marinade for later use.
  2. Take the thin-sliced chicken breast and add it to the remaining marinade, making sure each piece is fully coated. Cover the bowl with plastic wrap and refrigerate the chicken for at least 30 minutes to let those flavors infuse.
  3. After marinating, heat a nonstick skillet over medium-high heat and add a drizzle of olive oil.
  4. Place the marinated chicken in the hot skillet, searing each piece until it’s golden brown, about 3-4 minutes. Then flip the chicken and continue cooking for an additional 3-4 minutes until it’s cooked through.
  5. Once the chicken is fully cooked, transfer it to a serving plate. Drizzle with the reserved marinade and top it off with freshly chopped parsley and crumbled feta cheese. Serve with lemon wedges on the side for that extra zing!

Notes

For a more intense flavor, let the chicken marinate overnight. Thin-sliced chicken cooks faster but make sure to not overcook it.
