Description

Delightful Grape Soda Cupcakes combine the nostalgic sweetness of grape soda with a soft, fluffy cupcake texture, perfect for parties or family gatherings.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup grape soda
  • 1/4 cup milk
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 tablespoons grape soda (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Purple food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with colorful cupcake liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat the butter and sugar in a large bowl with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients, alternating with grape soda and milk, mixing until just combined.
  6. Divide the batter evenly among the liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cupcakes in the tin for 5 minutes before transferring to a wire rack to cool completely.
  9. Beat the softened butter for the frosting until smooth, then gradually add the powdered sugar and beat well.
  10. Mix in the grape soda and vanilla extract until smooth, adding purple food coloring if desired.
  11. Frost the cooled cupcakes with a piping bag or spatula.

Notes

For a festive touch, add edible glitter on top. Substitute some milk with extra grape soda for a stronger flavor.
