Ingredients

  • 4 slices of rustic bread (sourdough or French)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cups cremini or white mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the unsalted butter and olive oil in a large skillet over medium heat.
  3. Add the sliced mushrooms and let them sizzle for about 5-7 minutes until golden brown and soft.
  4. Introduce the minced garlic and fresh thyme into the pan and stir for an additional 1-2 minutes.
  5. Season lightly with salt and pepper.
  6. Stir in the heavy cream and let it simmer for about 2 minutes until it thickens.
  7. Arrange the rustic bread slices on a baking sheet and toast them in the oven for around 5-7 minutes.
  8. Spoon the mushroom and garlic mixture generously onto each piece of toasted bread.
  9. Sprinkle grated Parmesan and shredded mozzarella cheese over the toasts.
  10. Return the toasts to the oven for another 5-7 minutes until the cheese melts and bubbles.
  11. Garnish with fresh parsley and serve immediately.

Notes

For the best results, taste and adjust your seasoning as you cook. Use whole grain bread for a healthier option.
