Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups mini Reese’s peanut butter cups, chopped
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. Beat together the creamy peanut butter, softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the large egg and vanilla extract, continuing to beat until fully incorporated.
  4. Combine the all-purpose flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry mixture to your wet ingredients, mixing until just combined.
  6. Stir in the chopped mini Reese’s peanut butter cups.
  7. Beat the softened cream cheese, powdered sugar, and remaining vanilla extract until smooth and creamy.
  8. Roll the cookie dough into 1-inch balls and press a well into the center of each ball.
  9. Spoon about 1/2 teaspoon of the cream cheese mixture into each well.
  10. Bake the cookies for 10-12 minutes until edges are golden brown.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

Use room-temperature ingredients for better blending. For chocolate flavor, consider adding cocoa powder.
