- 1 1/2 cups mini Reese’s peanut butter cups, chopped
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
- Beat together the creamy peanut butter, softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the large egg and vanilla extract, continuing to beat until fully incorporated.
- Combine the all-purpose flour, baking soda, and salt in a separate bowl.
- Gradually add the dry mixture to your wet ingredients, mixing until just combined.
- Stir in the chopped mini Reese’s peanut butter cups.
- Beat the softened cream cheese, powdered sugar, and remaining vanilla extract until smooth and creamy.
- Roll the cookie dough into 1-inch balls and press a well into the center of each ball.
- Spoon about 1/2 teaspoon of the cream cheese mixture into each well.
- Bake the cookies for 10-12 minutes until edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
Use room-temperature ingredients for better blending. For chocolate flavor, consider adding cocoa powder.
