Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and salt in a bowl.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until smooth.
- Beat in the cream cheese until fully incorporated.
- Combine the dry ingredients with the mixture until just mixed, then stir in the chopped mini Reese’s.
- Blend together the cream cheese, powdered sugar, and vanilla extract for the filling.
- Drop spoonfuls of dough onto the baking sheet, creating an indentation in the center of each cookie.
- Spoon in a dollop of cheesecake filling into the indentation.
- Bake for 10-12 minutes or until the edges are golden brown.
- Cool on the baking sheet before transferring to a wire rack.
Notes
Chill the dough for 30 minutes before baking to enhance flavor and maintain structure.
