Ingredients

  • 2 lbs. organic chicken (drumsticks, wings, and thigh pieces)
  • 2 tsps sea salt, divided
  • 2 tsps black pepper, divided
  • 2 tsps smoked paprika, divided
  • 2 tsps garlic powder, divided
  • 2 tsps dried thyme, divided
  • 2 tsps dried parsley, divided
  • 2 tsps dried basil, divided
  • 1/2 cup organic all-purpose flour
  • 2 cups breadcrumbs
  • 2 cups cornflakes, crushed
  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 2 Tbsps hot honey
  • 6 Tbsps unsalted butter
  • 1/2 cup hot honey for sauce
  • 2 tsps cayenne pepper
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika for sauce
  • 1/2 tsp garlic powder for sauce
  • Pinch of sea salt for sauce

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet with parchment paper and a wire rack.
  2. In a large mixing bowl, combine the cleaned chicken with 2 tablespoons of hot honey and the spices; mix thoroughly and let marinate for 5-10 minutes.
  3. Pat the chicken dry with paper towels and coat each piece in flour.
  4. In a separate bowl, mix together the crushed cornflakes, breadcrumbs, and remaining spices.
  5. Whisk the eggs and almond milk until smooth; dip each flour-coated piece of chicken in the egg mixture, then coat with the breadcrumb mixture.
  6. Arrange the coated chicken pieces on the baking sheet and bake for 30-35 minutes until golden and crispy.
  7. While the chicken bakes, melt the butter in a skillet and add the sauce ingredients; stir until combined.
  8. Once the chicken is done, spoon the spicy honey glaze generously over each piece and serve hot.

Notes

Use skin-on chicken for a crispier texture. Adjust the cayenne pepper for more or less heat.
