- 2 lbs. organic chicken (drumsticks, wings, and thigh pieces)
- 2 tsps sea salt, divided
- 2 tsps black pepper, divided
- 2 tsps smoked paprika, divided
- 2 tsps garlic powder, divided
- 2 tsps dried thyme, divided
- 2 tsps dried parsley, divided
- 2 tsps dried basil, divided
- 1/2 cup organic all-purpose flour
- 2 cups breadcrumbs
- 2 cups cornflakes, crushed
- 2 large eggs
- 1 cup unsweetened almond milk
- 2 Tbsps hot honey
- 6 Tbsps unsalted butter
- 1/2 cup hot honey for sauce
- 2 tsps cayenne pepper
- 1/2 tsp chili powder
- 1/2 tsp smoked paprika for sauce
- 1/2 tsp garlic powder for sauce
- Pinch of sea salt for sauce
Instructions
- Preheat your oven to 400°F (200°C) and prepare a large baking sheet with parchment paper and a wire rack.
- In a large mixing bowl, combine the cleaned chicken with 2 tablespoons of hot honey and the spices; mix thoroughly and let marinate for 5-10 minutes.
- Pat the chicken dry with paper towels and coat each piece in flour.
- In a separate bowl, mix together the crushed cornflakes, breadcrumbs, and remaining spices.
- Whisk the eggs and almond milk until smooth; dip each flour-coated piece of chicken in the egg mixture, then coat with the breadcrumb mixture.
- Arrange the coated chicken pieces on the baking sheet and bake for 30-35 minutes until golden and crispy.
- While the chicken bakes, melt the butter in a skillet and add the sauce ingredients; stir until combined.
- Once the chicken is done, spoon the spicy honey glaze generously over each piece and serve hot.
Notes
Use skin-on chicken for a crispier texture. Adjust the cayenne pepper for more or less heat.
