- 1 lb ground chicken
- 1/2 cup Panko breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 egg, lightly beaten
- 3 cloves garlic, minced
- 1/2 small onion, finely diced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil
- 1/4 cup grated Parmesan cheese (for topping)
- 1/4 cup breadcrumbs (for topping)
- 2 tbsp melted butter
- 1 clove garlic, minced (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your baking dish by lining it with parchment paper or lightly greasing a loaf pan.
- Combine the ground chicken, Panko breadcrumbs, Parmesan cheese, mozzarella cheese, beaten egg, minced garlic, finely diced onion, Italian seasoning, salt, pepper, and chopped parsley in a large mixing bowl.
- Transfer the mixture to the prepared baking dish or loaf pan and shape it into a loaf.
- Whisk together the topping ingredients in a smaller bowl: Parmesan cheese, breadcrumbs, melted butter, and minced garlic.
- Sprinkle the topping generously over the meatloaf.
- Place the meatloaf in the preheated oven and bake for 40-45 minutes.
- Remove the meatloaf when the internal temperature reaches 165°F (74°C) and let it rest for 5-10 minutes before slicing.
- Slice and serve alongside your favorite sides.
