Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup shredded mozzarella cheese (optional, for topping)
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your loaf pan by greasing it or lining it with parchment paper.
  2. Combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, onion, egg, milk, parsley, salt, and pepper in a large mixing bowl until well mixed.
  3. Transfer the mixture into the prepared loaf pan, shaping it into a loaf shape.
  4. Drizzle olive oil over the top of the meatloaf.
  5. Bake for 45-50 minutes until cooked through, reaching an internal temperature of 165°F (74°C). If desired, sprinkle mozzarella over the top during the last 5 minutes of baking.
  6. Let it rest for about 10 minutes before slicing and serving, garnished with parsley.

Notes

For added moisture, consider mixing in Worcestershire sauce. You can substitute ground chicken with turkey or beef, and add herbs like thyme for extra flavor.
