Delightful lasagna roll-ups filled with shredded chicken, creamy ricotta, and covered in marinara sauce.

- 9 lasagna noodles
- 2 cups cooked chicken, shredded
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 cup spinach, chopped
- 1 cup marinara sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Boil the lasagna noodles according to the package instructions until al dente. Drain and set aside.
- Combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, grated Parmesan, minced garlic, chopped spinach, Italian seasoning, salt, and pepper in a mixing bowl.
- Preheat your oven to 375°F (190°C) and spread a layer of marinara sauce on the bottom of a baking dish.
- Take a lasagna noodle, add a spoonful of the chicken mixture, roll it up tightly, and place seam-side down in the baking dish. Repeat for all noodles.
- Pour the remaining marinara sauce over the top of the rolls and sprinkle the rest of the mozzarella cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Cool for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
Avoid overcooking the lasagna noodles. You can prepare the filling a day ahead. Optionally, use low-fat or dairy-free cheese for a healthier option.
