Description

Delightful lasagna roll-ups filled with shredded chicken, creamy ricotta, and covered in marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 cup marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Boil the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  2. Combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, grated Parmesan, minced garlic, chopped spinach, Italian seasoning, salt, and pepper in a mixing bowl.
  3. Preheat your oven to 375°F (190°C) and spread a layer of marinara sauce on the bottom of a baking dish.
  4. Take a lasagna noodle, add a spoonful of the chicken mixture, roll it up tightly, and place seam-side down in the baking dish. Repeat for all noodles.
  5. Pour the remaining marinara sauce over the top of the rolls and sprinkle the rest of the mozzarella cheese.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

Avoid overcooking the lasagna noodles. You can prepare the filling a day ahead. Optionally, use low-fat or dairy-free cheese for a healthier option.
