Ingredients

  • 1.25 lb sirloin steak, cut into 1-inch pieces
  • 1.25 lb baby Yukon gold potatoes, halved
  • 2 tbsp olive oil, divided
  • 1.25 tsp kosher salt
  • 1 tsp black pepper, freshly ground
  • 0.75 tsp paprika
  • 0.5 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 0.25 cup low-sodium beef broth
  • 3 tbsp unsalted butter
  • 2.5 tsp garlic, minced
  • 1.5 tsp fresh rosemary, chopped
  • 1.5 tsp fresh thyme, chopped
  • 0.25 tsp crushed red pepper flakes (optional)
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the sirloin steak pieces, seasoning them with kosher salt and freshly ground black pepper. Sear until golden brown, about 5-7 minutes. Remove the steak from the skillet and set aside.
  2. Add the remaining tablespoon of olive oil along with the halved baby Yukon gold potatoes to the same skillet. Cook for about 10 minutes, stirring occasionally until the potatoes soften and turn golden brown.
  3. Stir in the paprika, onion powder, and crushed red pepper flakes if desired.
  4. Add the minced garlic and stir quickly to prevent burning. Pour in the Worcestershire sauce and beef broth, scraping any flavorful bits stuck to the skillet.
  5. Return the seared steak to the skillet, adding the butter. Mix well, allowing the butter to melt.
  6. Sprinkle the chopped rosemary and thyme into the mixture.
  7. Squeeze lemon juice over the skillet and simmer for another 4-5 minutes, or until the steak reaches your desired doneness.
  8. Before serving, sprinkle fresh parsley on top for color and flavor.

Notes

For a healthier option, substitute butter with olive oil or use lean cuts of meat. Leftovers can be stored in an airtight container for up to three days.
