Ingredients

  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup plain yogurt
  • 1 cup cottage cheese
  • 1/2 cup warm water
  • 2 tablespoons melted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Combine the dry ingredients in a large mixing bowl: all-purpose flour, baking powder, salt, and sugar.
  2. Add the wet ingredients: plain yogurt, cottage cheese, warm water, melted butter, and olive oil. Mix until a soft dough starts to form.
  3. Transfer the dough to a floured surface and knead for about five minutes until it’s smooth and elastic.
  4. Shape the dough into a ball, cover it with a damp cloth, and let it rest for 20 minutes.
  5. Divide the dough into six equal portions and roll each into rounds about 1/4 inch thick.
  6. Heat a skillet over medium-high heat and drizzle it with olive oil.
  7. Cook each flatbread for about two minutes on one side, then flip and cook for another 1-2 minutes until golden brown.
  8. Combine melted butter with minced garlic and brush this mixture over the warm flatbreads. Finish by sprinkling with chopped parsley and crumbled feta.
  9. Serve warm, either on their own, with dips, or alongside your favorite dishes.

Resting time for the dough enhances texture. You can freeze flatbreads for up to three months.
