- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup plain yogurt
- 1 cup cottage cheese
- 1/2 cup warm water
- 2 tablespoons melted butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
Instructions
- Combine the dry ingredients in a large mixing bowl: all-purpose flour, baking powder, salt, and sugar.
- Add the wet ingredients: plain yogurt, cottage cheese, warm water, melted butter, and olive oil. Mix until a soft dough starts to form.
- Transfer the dough to a floured surface and knead for about five minutes until it’s smooth and elastic.
- Shape the dough into a ball, cover it with a damp cloth, and let it rest for 20 minutes.
- Divide the dough into six equal portions and roll each into rounds about 1/4 inch thick.
- Heat a skillet over medium-high heat and drizzle it with olive oil.
- Cook each flatbread for about two minutes on one side, then flip and cook for another 1-2 minutes until golden brown.
- Combine melted butter with minced garlic and brush this mixture over the warm flatbreads. Finish by sprinkling with chopped parsley and crumbled feta.
- Serve warm, either on their own, with dips, or alongside your favorite dishes.
Notes
Resting time for the dough enhances texture. You can freeze flatbreads for up to three months.
