Ingredients

  • 1 lb lobster meat, cooked and chopped
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped

  • 2 large potatoes, peeled and diced
  • 1/4 teaspoon saffron threads
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. Bring water to a rolling boil in a saucepan, then add diced potatoes and simmer until fork-tender, about 15 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Steep saffron threads in 2 tablespoons of hot water for about 5 minutes.
  4. Combine saffron water with milk, butter, salt, and pepper in the potatoes and mash until creamy.
  5. Heat a skillet over medium heat and melt the unsalted butter.
  6. Add minced garlic and sauté for 1-2 minutes until fragrant.
  7. Incorporate the chopped lobster meat, lemon juice, salt, and pepper, cooking for another 2-3 minutes.
  8. Serve the saffron mash on a plate and top with the garlic butter lobster. Garnish with parsley.
