Description

Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp chopped parsley
  • 8 oz fettuccine or pasta of choice
  • 1 tbsp olive oil
  • 1/4 cup grated Parmesan for topping

Instructions

  1. Cook the pasta according to the package directions. Once al dente, drain and set aside.
  2. Prepare the chicken by heating olive oil in a large skillet over medium heat. Add chicken pieces and sauté until browned and fully cooked, about 6-8 minutes. Season with salt, pepper, and Italian seasoning, then set aside.
  3. Make the sauce by melting butter in the same skillet over medium heat. Add minced garlic and sauté until fragrant, about one minute.
  4. Simmer by pouring in chicken broth and scraping up any brown bits. Let it simmer for 2-3 minutes.
  5. Cream it up by lowering heat and adding heavy cream and grated Parmesan cheese. Stir until smooth and creamy.
  6. Combine the chicken with the sauce, cooking for an additional 2-3 minutes.
  7. Serve the chicken and sauce over the pasta, garnishing with chopped parsley and extra Parmesan cheese.

Notes

For extra flavor, consider adding fresh herbs or vegetables. Store leftovers in an airtight container.
