  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • 2 cups fresh spinach, chopped
  • Salt and pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 tablespoons butter
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside, reserving about 1/4 cup of pasta water for later.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef, seasoning with salt and pepper. Cook until browned, breaking it apart as it cooks to ensure uniformity.
  3. Once the beef is browned, incorporate the minced garlic into the skillet and cook for an additional minute or until fragrant.
  4. Stir in the butter and the chopped spinach, cooking until the spinach has wilted down.
  5. For the garlic butter sauce, melt 4 tablespoons of butter in a separate pan over medium heat. Add in the heavy cream and bring it to a gentle simmer.
  6. Gradually stir in the grated Parmesan cheese, allowing it to melt smoothly into the cream. Continue cooking until the sauce thickens.
  7. Add the cooked tortellini to the skillet with the beef and spinach mixture. Toss everything together gently to combine.
  8. Pour the garlic butter sauce over the pasta, tossing again to ensure the tortellini is evenly coated. If too thick, add reserved pasta water until desired consistency is reached.
  9. Garnish with freshly chopped parsley, and then serve hot!

Notes

For extra flavor, try browning the butter before adding the cream. Substitute heavy cream with half-and-half for a lighter dish.
