- 1 package (9 oz) cheese tortellini
- 1 tablespoon olive oil
- 1 pound ground beef
- 3 cloves garlic, minced
- 1 tablespoon butter
- 2 cups fresh spinach, chopped
- Salt and pepper, to taste
- 1/4 teaspoon crushed red pepper flakes (optional)
- 4 tablespoons butter
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, for garnish (optional)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside, reserving about 1/4 cup of pasta water for later.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef, seasoning with salt and pepper. Cook until browned, breaking it apart as it cooks to ensure uniformity.
- Once the beef is browned, incorporate the minced garlic into the skillet and cook for an additional minute or until fragrant.
- Stir in the butter and the chopped spinach, cooking until the spinach has wilted down.
- For the garlic butter sauce, melt 4 tablespoons of butter in a separate pan over medium heat. Add in the heavy cream and bring it to a gentle simmer.
- Gradually stir in the grated Parmesan cheese, allowing it to melt smoothly into the cream. Continue cooking until the sauce thickens.
- Add the cooked tortellini to the skillet with the beef and spinach mixture. Toss everything together gently to combine.
- Pour the garlic butter sauce over the pasta, tossing again to ensure the tortellini is evenly coated. If too thick, add reserved pasta water until desired consistency is reached.
- Garnish with freshly chopped parsley, and then serve hot!
Notes
For extra flavor, try browning the butter before adding the cream. Substitute heavy cream with half-and-half for a lighter dish.
