- 1 cup Fresh Strawberries, hulled
- 1 cup Cantaloupe chunks or Mandarin Orange segments
- 1 cup Fresh Pineapple chunks
- 1 cup Green Grapes or Kiwi slices
- 1 cup Fresh Blueberries
- 1 cup Red or Purple Grapes
- Wooden or bamboo skewers (approx. 10-12)
- 1 cup Plain Greek Yogurt
- 2–3 tablespoons Honey
- 1 tablespoon Fresh Lime Juice
- 1 teaspoon Lime Zest
Instructions
- Wash all the fruit under cool running water and pat dry.
- Hull the strawberries and chop the cantaloupe and pineapple into bite-sized cubes. If using kiwi, peel and slice. Ensure grapes and blueberries are stemmed.
- In a medium bowl, combine Greek yogurt, honey, lime juice, and lime zest. Whisk until smooth.
- Thread the fruit onto the skewers in the order of the rainbow: Strawberry, Cantaloupe, Pineapple, Green Grape/Kiwi, Blueberry, Purple Grape.
- Arrange skewers on a platter and serve with the honey-lime yogurt dip.
