Ingredients

  • 1 cup Fresh Strawberries, hulled
  • 1 cup Cantaloupe chunks or Mandarin Orange segments
  • 1 cup Fresh Pineapple chunks
  • 1 cup Green Grapes or Kiwi slices
  • 1 cup Fresh Blueberries
  • 1 cup Red or Purple Grapes
  • Wooden or bamboo skewers (approx. 10-12)
  • 1 cup Plain Greek Yogurt
  • 23 tablespoons Honey
  • 1 tablespoon Fresh Lime Juice
  • 1 teaspoon Lime Zest

Instructions

  1. Wash all the fruit under cool running water and pat dry.
  2. Hull the strawberries and chop the cantaloupe and pineapple into bite-sized cubes. If using kiwi, peel and slice. Ensure grapes and blueberries are stemmed.
  3. In a medium bowl, combine Greek yogurt, honey, lime juice, and lime zest. Whisk until smooth.
  4. Thread the fruit onto the skewers in the order of the rainbow: Strawberry, Cantaloupe, Pineapple, Green Grape/Kiwi, Blueberry, Purple Grape.
  5. Arrange skewers on a platter and serve with the honey-lime yogurt dip.
