  • 1/2 teaspoon peppermint extract
  • Crushed peppermint candies (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk the flour, baking soda, and salt together in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the chocolate chunks and crushed peppermint candies.
  8. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, until the edges are golden.
  10. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. Beat softened butter in a bowl until creamy, then gradually add powdered sugar, milk, vanilla extract, and peppermint extract, mixing until smooth.
  12. Spread frosting on each cooled cookie and garnish with crushed peppermint candies.

Notes

For a stronger peppermint flavor, add drops of peppermint oil. Ensure butter is at room temperature for easy creaming. If you like softer cookies, underbake them slightly.
