Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Whisk the flour, baking soda, and salt together in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chunks and crushed peppermint candies.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until the edges are golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Beat softened butter in a bowl until creamy, then gradually add powdered sugar, milk, vanilla extract, and peppermint extract, mixing until smooth.
- Spread frosting on each cooled cookie and garnish with crushed peppermint candies.
Notes
For a stronger peppermint flavor, add drops of peppermint oil. Ensure butter is at room temperature for easy creaming. If you like softer cookies, underbake them slightly.
