A comforting casserole featuring savory ground beef, zesty chili spices, gooey cheddar cheese, and crunchy Fritos, perfect for family dinners or potlucks.


Ingredients

  • 1 lb ground beef
  • 1 diced onion
  • 2 minced garlic cloves
  • 1 (15 oz) can tomato sauce
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 cup beef stock
  • 3 cups Fritos
  • 2 cups shredded cheddar cheese
  • 1 cup Fritos (reserved for topping)

Instructions

  1. In a skillet over medium heat, cook the ground beef with the diced onion until there’s no pink remaining. Drain most of the fat, leaving about 1 tablespoon behind for flavor. Add the minced garlic and sauté for 30 seconds.
  2. Stir in the tomato sauce, chili powder, cumin, smoked paprika, and beef stock. Allow the mixture to simmer for 10 minutes.
  3. In a 9×13 baking dish, create a base layer with the Fritos, breaking some for better coverage. Spread the chili mixture evenly on top, followed by the shredded cheddar cheese. Finish with another sprinkle of reserved Fritos.
  4. Bake in a preheated oven at 375°F for about 15 minutes, or until the cheese is bubbling.
  5. Allow to cool for 5 minutes before serving. Top with sour cream, diced avocado, or salsa as desired.

Notes

For a healthier option, consider using lean ground turkey or incorporating black beans for added fiber.
