- 1 lb ground beef
- 1 diced onion
- 2 minced garlic cloves
- 1 (15 oz) can tomato sauce
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 cup beef stock
- 3 cups Fritos
- 2 cups shredded cheddar cheese
- 1 cup Fritos (reserved for topping)
Instructions
- In a skillet over medium heat, cook the ground beef with the diced onion until there’s no pink remaining. Drain most of the fat, leaving about 1 tablespoon behind for flavor. Add the minced garlic and sauté for 30 seconds.
- Stir in the tomato sauce, chili powder, cumin, smoked paprika, and beef stock. Allow the mixture to simmer for 10 minutes.
- In a 9×13 baking dish, create a base layer with the Fritos, breaking some for better coverage. Spread the chili mixture evenly on top, followed by the shredded cheddar cheese. Finish with another sprinkle of reserved Fritos.
- Bake in a preheated oven at 375°F for about 15 minutes, or until the cheese is bubbling.
- Allow to cool for 5 minutes before serving. Top with sour cream, diced avocado, or salsa as desired.
Notes
For a healthier option, consider using lean ground turkey or incorporating black beans for added fiber.
