- 1 cup dark rum
- 1 cup coconut rum
- 1 ½ cups all-purpose flour
- 1 (10-oz.) bag sweetened coconut flakes
- 2 large eggs
- ½ cup coconut milk
- Vegetable oil (for frying)
- 4 oz. cream cheese, softened
- ½ cup powdered sugar
Instructions
- Soak the pineapple rings in a mixture of dark rum and coconut rum for at least 30 minutes.
- In a medium bowl, combine the all-purpose flour and sweetened coconut flakes.
- Dredge each pineapple ring in the flour mixture, completely coating it.
- In another bowl, whisk together the eggs and coconut milk to make the egg wash.
- Dip the coated pineapple rings into the egg wash before frying in preheated vegetable oil until golden brown, about 2-3 minutes per side.
- While frying, mix the softened cream cheese and powdered sugar until smooth for the dip.
- Serve the warm fried pineapple rings alongside the cream cheese dip.
Notes
For an extra layer of flavor, add a sprinkle of cinnamon or nutmeg to the flour mixture. Serve with honey or chocolate syrup for added decadence.
