Description

Fried Pineapple Rings are a delightful fusion of tropical sweetness and indulgent crunch, perfect for summer gatherings and cozy family nights.


Ingredients

  • 8 ripe pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz. cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Soak the pineapple rings in a mixture of dark rum and coconut rum for at least 30 minutes.
  2. In a medium bowl, combine the all-purpose flour and sweetened coconut flakes.
  3. Dredge each pineapple ring in the flour mixture, completely coating it.
  4. In another bowl, whisk together the eggs and coconut milk to make the egg wash.
  5. Dip the coated pineapple rings into the egg wash before frying in preheated vegetable oil until golden brown, about 2-3 minutes per side.
  6. While frying, mix the softened cream cheese and powdered sugar until smooth for the dip.
  7. Serve the warm fried pineapple rings alongside the cream cheese dip.

Notes

For an extra layer of flavor, add a sprinkle of cinnamon or nutmeg to the flour mixture. Serve with honey or chocolate syrup for added decadence.
