  • 2 large onions, thinly sliced
  • 3 cups beef broth

  • 1 tablespoon Worcestershire sauce
  • 8 oz egg noodles
  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese

Instructions

  1. Heat a tablespoon of olive oil in a large skillet over medium heat.
  2. Add the sliced onions and stir them frequently as they soften and caramelize (15-20 minutes).
  3. Once the onions turn golden brown, add the minced garlic and cook for an additional minute.
  4. In a separate pot, brown the beef stew meat for about 5 minutes until seared on all sides.
  5. Add caramelized onions to the beef along with the beef broth, thyme, Worcestershire sauce, salt, and pepper.
  6. Stir everything together and let it simmer gently, covered, for 1 to 1.5 hours.
  7. Meanwhile, cook the egg noodles according to package instructions; drain and set aside.
  8. Once the beef becomes tender, stir in the cooked noodles until combined.
  9. Sprinkle the top with shredded Swiss cheese and cover until melted.
  10. Garnish with fresh parsley before serving.
