Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1/4 teaspoon salt
  • 1 egg white or 3 tablespoons meringue powder
  • 1 3/4 cups powdered sugar for icing
  • 1/2 teaspoon lemon juice
  • Gel food colors (pink, purple, green, yellow)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla extract, almond extract (if using), and salt. Mix until combined.
  4. Gradually add the all-purpose flour, 1/4 cup at a time, until the dough comes together.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  6. Cut the dough into flower shapes using a cookie cutter and transfer them to the prepared baking sheet.
  7. Bake for 8-10 minutes or until the edges are slightly golden. Allow the cookies to cool completely on a wire rack.
  8. Whisk the egg white (or meringue powder) and lemon juice in a bowl until frothy.
  9. Gradually add the powdered sugar and mix until smooth and stiff peaks form.
  10. Divide the icing into separate bowls and add gel food coloring to create different colors.
  11. Fill piping bags with the royal icing and decorate the cookies.
  12. Allow the cookies to dry for at least 2-3 hours before serving or storing.
