- 1/2 cup powdered sugar
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1/4 teaspoon salt
- 1 egg white or 3 tablespoons meringue powder
- 1 3/4 cups powdered sugar for icing
- 1/2 teaspoon lemon juice
- Gel food colors (pink, purple, green, yellow)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract, almond extract (if using), and salt. Mix until combined.
- Gradually add the all-purpose flour, 1/4 cup at a time, until the dough comes together.
- Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
- Cut the dough into flower shapes using a cookie cutter and transfer them to the prepared baking sheet.
- Bake for 8-10 minutes or until the edges are slightly golden. Allow the cookies to cool completely on a wire rack.
- Whisk the egg white (or meringue powder) and lemon juice in a bowl until frothy.
- Gradually add the powdered sugar and mix until smooth and stiff peaks form.
- Divide the icing into separate bowls and add gel food coloring to create different colors.
- Fill piping bags with the royal icing and decorate the cookies.
- Allow the cookies to dry for at least 2-3 hours before serving or storing.
