Ingredients

  • 1 egg white or 3 tablespoons meringue powder
  • 1 3/4 cups powdered sugar
  • 1/2 teaspoon lemon juice
  • Gel food colors (pink, purple, green, yellow)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together the all-purpose flour, powdered sugar, and salt in a medium bowl.
  3. Cream the softened butter, vanilla extract, and almond extract (if using) in a large bowl until light and fluffy.
  4. Add the dry ingredients to the butter mixture gradually, mixing until you form a soft dough.
  5. Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for about 30 minutes.
  6. Roll the chilled dough out on a floured surface to about 1/4-inch thickness and use floral cookie cutters to cut out shapes.
  7. Transfer the cookies to the prepared baking sheets and bake for 10-12 minutes until the edges are lightly golden.
  8. Cool the cookies completely on a wire rack.
  9. Prepare royal icing by beating egg whites until stiff peaks form, then gradually adding powdered sugar and lemon juice.
  10. Tint the royal icing with gel food colors and decorate the cooled cookies using a piping bag.
  11. Allow the icing to set before serving or storing.

For extra flavorful cookies, consider browning the butter slightly before mixing. Use a rolling pin with guides for even thickness.
