- 1/2 cup powdered sugar
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1/4 teaspoon salt
- 1 egg white or 3 tablespoons meringue powder
- 1 3/4 cups powdered sugar
- 1/2 teaspoon lemon juice
- Gel food colors (pink, purple, green, yellow)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Whisk together the all-purpose flour, powdered sugar, and salt in a medium bowl.
- Cream the softened butter, vanilla extract, and almond extract (if using) in a large bowl until light and fluffy.
- Add the dry ingredients to the butter mixture gradually, mixing until you form a soft dough.
- Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for about 30 minutes.
- Roll the chilled dough out on a floured surface to about 1/4-inch thickness and use floral cookie cutters to cut out shapes.
- Transfer the cookies to the prepared baking sheets and bake for 10-12 minutes until the edges are lightly golden.
- Cool the cookies completely on a wire rack.
- Prepare royal icing by beating egg whites until stiff peaks form, then gradually adding powdered sugar and lemon juice.
- Tint the royal icing with gel food colors and decorate the cooled cookies using a piping bag.
- Allow the icing to set before serving or storing.
Notes
For extra flavorful cookies, consider browning the butter slightly before mixing. Use a rolling pin with guides for even thickness.
